Sweetcorn Fritters

Sweetcorn Fritters

This is a wonderful recipe is a quick and simple healthy meal that I love making at home.

These fritters marry perfectly with fresh tomato salsa and smashed avocado and freshly squeezed limes.

The secret to making them so very delicious .. if you time is to use fresh corn and not the frozen variety.

It's also important not to rush the process of cooking them. I like to do a test fritter just to make sure it cooks properly in the pan - I taste and adjust where necessary.

It's important that the heat is gentle which makes sure your fritter won't burn and it cooks gently through the middle.

This recipe calls for Coconut flour which is gluten free and nut free so it’s kind to sensitive digestive systems.

Coconut flour also doesn’t give you that high blood sugar / insulin spike that you can often get with refined white flours so it's perfect for this recipe.

Brown rice flour, millet flour, almond flour can be used in place of coconut flour and it also pumps up the protein which I love. Use 2 - 4 tablespoons and adjust consistency where necessary.

Serve with smashed avocado and tomato salsa ..throw into travel baggie for a snack or serve alongside a crisp salad, cashew nuts and a lite dressing.

Zucchini Fries

Zucchini Fries

Have you ever made low carb crispy baked zucchini fries? If you haven’t… oh my gosh, you need to.

They are a much healthier alternative when you’re craving French fries.

These low carb zucchini fries are super simple, using common pantry ingredients.

WHAT ARE ZUCCHINI FRIES?

Oven baked zucchini fries are sticks of zucchini that are breaded and baked.

HOW TO SLICE ZUCCHINI FRIES

Slicing zucchini fries is super easy:

* Cut your zucchini in half lengthwise, then cut each half lengthwise again.

* Keep repeating cutting lengthwise until you get thin enough pieces.

* Once the pieces are narrow enough, just stack them and cut them across to get the length you want your baked zucchini fries to end up.

HOW TO MAKE ZUCCHINI FRIES CRISPY

Here are a few extra tips to ensure that happens:

WATCH FOR WATERY ZUCCHINI.

If yours is “wet”, it will have a harder time crisping up. Pat dry with paper towels if needed.

USE SMALLER ZUCCHINI IF POSSIBLE.

The larger the zucchini, the higher the moisture content.

Tofu Caesar Summer Rolls

Tofu Caesar Summer Rolls

This is my kind of soul food.

The kind that’s fresh, filling, and loaded with flavor. And that doesn’t make you feel like crap afterwards. Now that’s (healthy) livin’.

Origins of Fresh Spring Rolls

Fresh spring rolls (also known as gỏi cuốn or summer rolls) are a common Vietnamese dish, but the concept is believed to have originated in China. It’s thought that they may be a modification from Chinese egg rolls, but with Vietnamese flavors. Yummy 😋

Tuna Salad Lettuce Wraps

Tuna Salad Lettuce Wraps

A LIGHT HIGH-PROTEIN LUNCH IDEA

This low carb tuna salad lettuce wraps are my go-to for lunch, or even an afternoon snack.

Like other tuna recipes, they’re high in protein and the lettuce wraps add a satisfying crunch to an otherwise soft texture.

Handheld foods are perfect when you’re short on time and on the move!

THE BEST KIND OF LETTUCE FOR LETTUCE WRAPS

I used iceberg leaf lettuce. You want to choose something with large leaves that you can wrap around the tuna salad. Romaine lettuce leaves also work perfectly too.

Pear, Cured Ham & Walnut Salad

Walnuts are one of the best food sources for melatonin, a hormone that helps regulate the body clock for a better night's sleep. Give your walnuts a sprinkle of apple pie spice (optional) for a warm accent to a fresh and crunchy lunchtime salad.

Since the ingredients in this salad are so delicious, a simple lemon and olive oil dressing work best; a heavy dressing would mask the flavors. This pear salad can also be served without the cheese on top and would be a delicious but even lighter first course.

You can use almost any lettuce for this pear salad. Pick what you like best, anything from spicy arugula or watercress to mild butter lettuce.

The same goes for the pears: Bosc, Bartlett, Anjou or Comice would all be great choices.

Potassium is a vital mineral and electrolyte for your body.

It helps maintain normal blood pressure, transports nutrients into your cells and supports healthy nerve and muscle function.

The adequate intake (AI) for potassium is 4,700 mg in healthy individuals, but unfortunately, most people don’t get enough potassium through their diets.

Some people turn to bananas, as these are well known for being high in potassium, one medium-sized banana typically containing 422 mg or 9% of the AI

But bananas are not the only potassium heroes.

Two great choices.. 👉avocado & spinach!

Try this Avocado & Egg Dish instead of a banana for breakfast!!
