Lemon Bread with Strawberries & Cream Swirl

This is the most gorgeous lemon bread out there. It is swirled with raspberry jam and cream cheese, you are going to adore every bite.
Because we know most of you will try and make these swaps anyways, we did it for you!
Here’s the low down on how this bread is healthier than most other lemon bread recipes.
Flour: This is an option to use 50/50 recipe made with both all-purpose flour and white whole wheat flour. In order to make sure it was fluffy as can be and not so dense, you can keep some all-purpose in there. Or feel free to try and use all white whole wheat like I did :-)
Oil: Because we used an entire cup of bananas.. or you can substitute applesauce, we were able to bring the oil content down to just 2 tablespoons. We also opted to use coconut oil, which is our favorite for baking. You can try and use another fruit puree such as pear sauce or even pumpkin!
Sugar: When it comes to muffins and loaves, there truly isn’t anything better than brown sugar, which is what we used. However, we are confident that coconut sugar will work just the same.

How do you shred zucchini for muffins?

I like to shred zucchini in my food processor. This is the fastest way, but you can also use a box grater (use the large holes) instead.

There’s no need to peel the zucchini first, but quarter it and scrape out the seeds with a spoon if your zucchini are large.

How do you get the water out of zucchini?

Zucchini needs to be drained after shredding it to use it in baked goods like these chocolate zucchini muffins. Place the shredded zucchini in a fine mesh strainer and let the liquid drain out of it, pressing it with a spoon to get most of the liquid out.

You can wring out even more liquid in a clean kitchen towel if you like – just place the shredded zucchini on the towel, fold it over, twist the ends to seal it and the wring out as much liquid as you can.

But for muffins I usually just press out as much as I can in the strainer and that’s good enough.

Sweetcorn Fritters

This is a wonderful recipe is a quick and simple healthy meal that I love making at home.

These fritters marry perfectly with fresh tomato salsa and smashed avocado and freshly squeezed limes. 

The secret to making them so very delicious .. if you time is to use fresh corn and not the frozen variety.  

It's also important not to rush the process of cooking them. I like to do a test fritter just to make sure it cooks properly in the pan - I taste and adjust where necessary.  

It's important that the heat is gentle which makes sure your fritter won't burn and it cooks gently through the middle.

This recipe calls for Coconut flour which is gluten free and nut free so it’s kind to sensitive digestive systems.

Coconut flour also doesn’t give you that high blood sugar / insulin spike that you can often get with refined white flours so it's perfect for this recipe.

Brown rice flour, millet flour, almond flour can be used in place of coconut flour and it also pumps up the protein which I love. Use 2 - 4 tablespoons and adjust consistency where necessary.

Serve with smashed avocado and tomato salsa ..throw into travel baggie for a snack or serve alongside a crisp salad, cashew nuts and a lite dressing.

Slicing zucchini fries is super easy:

* Cut your zucchini in half lengthwise, then cut each half lengthwise again.

* Keep repeating cutting lengthwise until you get thin enough pieces.

* Once the pieces are narrow enough, just stack them and cut them across to get the length you want your baked zucchini fries to end up.

HOW TO MAKE ZUCCHINI FRIES CRISPY

Here are a few extra tips to ensure that happens:

WATCH FOR WATERY ZUCCHINI.

If yours is “wet”, it will have a harder time crisping up. Pat dry with paper towels if needed.

USE SMALLER ZUCCHINI IF POSSIBLE.

The larger the zucchini, the higher the moisture content.
