I used canned jackfruit to make this flavor packed curry as I haven’t had a chance to check out the fresh jackfruit at the Market.
I drained the liquid out of the canned jackfruit and rinsed the jackfruit chunks and let them dry off on a paper towel before I added them into this curry.
Delicious.. you can also substitute the rice for cauliflower rice and save some calories.

This recipe can be substituted with orange marmalade & a little orange juice... which I found to be the best and most flavorful combination.
Orange marmalade on its own was a little flat, but the zing of fresh oj added an awesome fresh flavor. You can use freshly squeezed or bottled orange juice.

Both ripe and underripe mango work well in this chicken and vegetable stir-fry.
If the mangoes you have are less ripe, use 2 teaspoons brown sugar. If they're ripe and sweet, just use 1 teaspoon or omit the brown sugar altogether.
